These delicious brinjals are very quick & easy to make. You will see these mostly cooked in konkan region of India. A very good accompaniment to serve with dal rice or roti sabzi. I remember my mom used to pack these for my lunch with chapatis and my cousin’s enjoy these as a snack to munch onn.
